Fry 2 lbs. of sliced tender young pea-pods with a sliced onion for five minutes without colouring ; add two quarts milk, boiling. Simmer for hours; strain. Boil again; remove from fire ; add beaten yolks of two raw eggs. Pour into soup-tureen over one pint and a half of boiled peas, cooked separately. A little sugar improves the soup when the pepper and salt are added. When not required for a maigre, add cheap stock instead of milk, with thyme and mint. The addition of cream, when plentiful, will greatly improve the maigre. Mrs. Low.
