Ingredients
- 12 good cooking apples
- ½ cup sugar (adjust if apples are very sour)
- 1 tablespoon melted butter
- ½ teaspoon lemon juice
- a little grated nutmeg
- ½ cup water
- pie crust
- 3 eggs
- 1 quart milk
- 1 teaspoon cornstarch
- sugar to taste

Preheat the oven to 350°F (175°C).

Pare and slice the apples, then fill a deep pie dish heaping full.

Add sugar, melted butter mixed with lemon juice, and grate nutmeg over the apples.

Make a rich pie crust using part butter and lard, line the edge of the dish with it, and cover the apples.

Brush the crust with beaten egg and bake for 30 to 40 minutes.

For the custard, whisk together 3 eggs and mix with 1 quart of milk.

Add cornstarch and sugar to taste, then cook until thickened.

Serve the custard in small cups or glasses over the pie.
