RICE MERINGUE

Ingredients

  • 1 cup rice
  • 4 cups milk
  • 3 egg yolks
  • 3 tablespoons white sugar
  • a pinch of nutmeg
  • 2 egg whites
  • 2 tablespoons white sugar
  • lemon or vanilla extract (for flavoring)

Directions

Boil the rice in water until soft, then drain completely.

Cool the rice, then mix in the milk, beaten egg yolks, sugar, and nutmeg.

Pour the mixture into a baking dish and bake at 350°F (175°C) for about 30 minutes.

Allow the pudding to cool.

Beat the egg whites until stiff, then gradually add the sugar and flavor with lemon or vanilla.

Spread the meringue over the cooled pudding and lightly brown it in the oven.
