Ingredients

  • 1 beef kidney
  • Coarse sea salt
  • Black pepper
  • Grated nutmeg
  • Minced parsley
  • Chopped shallots
  • 2 teaspoons flour
  • 1 cup gravy
  • ⅓ cup white wine
  • 1 tablespoon fresh butter
  • 1 tablespoon lemon juice
  • Fried bread for garnish

Directions

Slice the kidney thinly, removing the skin and fat.

Season with coarse sea salt, black pepper, and grated nutmeg.

Sprinkle with minced parsley and finely chopped shallots.

Fry the slices over high heat until browned on both sides.

Stir in 2 teaspoons of flour, then gradually add 1 cup of gravy and ⅓ cup of white wine.

Bring the sauce to a boil, then add 1 tablespoon of fresh butter and 1 tablespoon of lemon juice.

Pour the mixture into a hot dish garnished with fried bread.
