Ingredients
- ½ bullock's head, cleaned
- 1 cow heel
- pepper, to taste
- coarse sea salt, to taste

Soak the bullock's head and cow heel in warm water for 3 hours.

Boil them until tender.

Cut into small pieces and set aside.

Strain the boiling liquid and let it cool to skim off the fat.

Put the pieces and strained liquid into a saucepan and boil for 30 minutes.

Season with pepper and coarse sea salt to taste.

Pour into a mold or convenient dish and place in a cool area.

Once cold, it will form a jelly and is ready to use.
