Ingredients
- 1 quarter of lamb
- 3 slices of bacon
- butter
- fine bread crumbs
- coarse sea salt
- black pepper
- minced parsley
Directions

Trim the joint of lamb.

Skewer 3 slices of bacon to the outside.

Spread the inner side with butter.

Cover with fine bread crumbs seasoned with coarse sea salt, black pepper, and minced parsley to taste.

Bake in a moderate oven at 350°F (175°C).

When nearly done, remove the bacon and cover with more bread crumbs.

Bake until the top is nicely browned.

Serve with sauce or lemon juice, as preferred.
