Ingredients
- thick watermelon rind
- alum
- sugar (1 lb for each lb of rind)
- ginger tea
Directions

Soak the watermelon rind in alum water for 2 days.

Soak the rind in fresh water for another 2 days, changing the water each morning.

Trim off all green from the outside and all pink from the inside of the rind.

Cut the rind into squares or desired shapes.

Boil the rind in ginger tea until tender.

Make a syrup by boiling sugar with an equal weight of rind.

Transfer the tender rind from the ginger tea to the boiling syrup.

Boil until the rind is transparent or a pretty clear yellow.

Put the preserves into glass jars and seal.
