MARROW PUDDING

Ingredients

  • 4 ounces marrow or finely minced mutton suet
  • 4 ounces sugar
  • 4 ounces cleaned currants
  • a few sultana raisins
  • 8 ounces grated bread
  • ⅓ cup rum
  • a little sweet spice
  • 6 eggs, well beaten
  • ½ cup boiling milk

Directions

In a bowl, mix the marrow, sugar, currants, sultana raisins, grated bread, rum, sweet spice, and beaten eggs.

Stir well and fill a pudding dish nearly full with boiling milk.

Mix everything together and bake in a moderate oven at 350°F (175°C) until set.

For the sauce, combine ⅓ cup brandy, 2 ounces loaf sugar, 1 cup boiling milk, and a little grated nutmeg.

Serve the sauce in a sauceboat.
