A Good Beef Gravy (for Poultry or Game)

Ingredients

  • ½ lb lean beef
  • ½ pint cold water
  • 1 small onion
  • ½ teaspoon coarse sea salt
  • ¼ teaspoon pepper
  • 1 tablespoon mushroom ketchup or Harvey's sauce
  • 4 teaspoons arrowroot

Directions

Cut the beef into small pieces and place it in a stewpan with the cold water.

Add the chopped onion, salt, and pepper, then simmer gently for three hours.

Before serving, mix the arrowroot with a little cold water and stir it into the gravy.

Add the mushroom ketchup or Harvey's sauce and bring to a boil.

Strain the gravy into a tureen and serve hot.
