Ingredients

  • ½ cup pearl or minute tapioca
  • ¼ teaspoon salt
  • 7 sour apples
  • 2½ cups boiling water
  • ½ cup sugar
  • Butter for greasing

Directions

Soak the tapioca in cold water to cover for 1 hour, then drain.

Add boiling water and salt to the tapioca, and cook in a double boiler until transparent.

Core and peel the apples, then arrange them in a buttered pudding dish.

Fill the cavities of the apples with sugar.

Pour the cooked tapioca over the apples and bake in a 350°F (175°C) oven until the apples are soft.

Serve with additional sugar and cream.
