Ingredients
- 2 tablespoons flour
- ½ teaspoon salt
- ⅛ teaspoon pepper
- 1 cup milk
- 3 or 4 egg yolks
- 1 cup grated cheese
- a few grains of baking soda
- 3 egg whites

Prepare a white sauce by combining flour, salt, pepper, and milk in a saucepan over medium heat.

Cook until thickened, stirring constantly.

Remove from heat and stir in egg yolks, grated cheese, and baking soda.

In a separate bowl, beat egg whites until stiff but not dry.

Gently fold the egg whites into the cheese mixture.

Pour into an oiled baking dish and bake at 400°F (200°C) for about 30 minutes.

Serve in place of meat at lunch or as a vegetable.
