  • 1 egg
  • 8 ounces mascarpone cheese, room temperature
  • Zest of ½ orange
  • 1 ½ tablespoons granulated sugar
  • 4 tablespoons apricot jam, divided
  • Fruit:
  • 4 – 5 strawberries, hulled and sliced thin
  • 2 kiwi fruits, peeled and sliced thin
  • 2 navel oranges
  • Raspberries
  • Blueberries
  • Bake for 30 – 35 minutes until the puff pastry is golden brown, puffed and flaky.
  • While the pastry bakes, whisk the mascarpone with the orange zest, sugar and 1 tablespoon of apricot jam. Reserve.
