- 300 gr salmon, bonleless and skinned
- 1-2 shallots, finely chopped
- ¼ pimiento, finely chopped
- Small bunch of fresh coriander, chopped
- Salt and white pepper from a grinder
- Good caviar (salmon-caviar, lumpfish- or capelin roe).
- 1 dl sour cream
- Juice of 1 lime
- 1 teaspoon Dijon-mustard
- ½ teaspoon maple syrup

Directions
Lime and coriander for garnish.
Mince or coarsely chop the salmon, preferably in a food mixer. (Don´t mush it!) Combine with the shallots, pimiento and chopped coriander leaves.
Season with salt and pepper
Form the mixture into little towers. Put one teaspoon caviar on top.
Sauce: For the sauce you stir together the sour cream, lime-juice, mustard and maple syrup. Salt and pepper to taste. Place the salmon-tartar and sauce on a plate and garnish with lime wedges and coriander leaves.
