Cook onions and celery in butter in large skillet over medium heat until tender crisp. Add rice, apricots, ginger, salt, pepper and lemon juice; heat thoroughly, tossing lightly with fork.

Press firmly into individual custard cups or molds; let stand 3 minutes. Unmold on serving dish.
