  • 1 cup shredded cooked chicken
  • 1 cup 4 ounces shredded Cheddar cheese
  • 1/2 cup sliced green onions
  • 1/4 cup chopped black olives
  • 1 15-ounce package refrigerated pie crusts
  • 1 teaspoon oregano
  • 1 teaspoon prepared horseradish
  • 1/4 teaspoon ground black pepper
  • 1 pound peeled and deveined shrimp
  • 3 cups hot cooked rice
  • grated Parmesan cheese (optional)
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground white pepper
  • 1/4 teaspoon ground nutmeg
  • 1 cup shredded Swiss cheese, divided
  • 1/4 cup dry white wine
  • 1/4 teaspoon ground white pepper

Directions

Combine rice, chicken, cheese, onions and olives in large bowl. Spoon half of rice mixture on half of each pie crust. Fold crust over filling. Seal and crimp edges. Place on baking sheet. Bake at 400 degrees 20 to 22 minutes or until golden brown. Cut each empanada in half. Serve immediately.
