- 1 16-ounce can kidney beans
- 2 cups cooked rice
- 1 large head lettuce, shredded
- 3 medium tomatoes, diced
- 1 medium onion, thinly sliced
- 1/2 cup French dressing
- 1 cup (4 ounces) grated cheese (Monterey Jack or Cheddar)
- 1 6-ounce package corn chips
- 1 to 2 avocados

Directions
Mix chili, beans and rice. Heat.
Combine lettuce, tomatoes, onion and French dressing. To serve, arrange lettuce mixture on plates. Top with chili-rice mixture. Sprinkle with cheese and corn chips. Garnish with avocado wedges. Serve with taco sauce or salsa picante, if desired.
