  • 4 fresh plums, cut into bite-size pieces
  • 1/3 cup finely chopped fresh chives
  • 1/3 cup golden raisins
  • 3 tablespoons white grape juice
  • 2 tablespoons vegetable oil

Directions

Combine rice, plums, chives and raisins in large bowl. Do not mix; set aside.

Combine grape juice, oil, vinegar, honey, ginger, coriander, salt and pepper in small bowl; whisk to blend. Pour dressing over salad and toss. Top with bacon. Serve over lettuce leaves.
