Ingredients

  • 4 Tbsp unsalted butter
  • 2 cups mashed sweet potatoes
  • 6 cups chicken stock (or Maggi equivalent)
  • 1 tsp salt
  • 4 cups cooked pumpkin
  • 1 cup peanut butter
  • 1 tsp black pepper
  • fresh chives

Directions

Melt butter in soup pot over medium heat.

Stir in pumpkin, sweet potatoes and peanut butter.

Add stock, salt, pepper, and stir well until smooth.

Reduce heat and simmer to cook for 20 minutes.

Before serving, garnish with chives.
