Ingredients

  • 1 cup sugar 225g
  • 1/2 cup Vegetable Oil
  • margarine 112g
  • 2 eggs
  • 2 cups flour 450g
  • 2 tblsps Baking Powder 10ml
  • 1/2 tsp Baking Soda 2ml
  • 1 tsp cinnamon 5ml
  • 1 tsp grated Orange Peel 5ml
  • 2 cups grated carrots 450g
  • 1 cup raisin (optional) 225g

Directions

Preheat oven to 350 F/180C.

Prepare a small cake tin (8" 2"). Grease and flour tin.

Cream fat and sugar until well mixed.

Beat eggs. Add to fat and sugar mixture. Mix well.

Add dry ingredients to egg mixture (fold in).

Add grated orange peel and grated carrots.

Put batter in greased pan.

Bake at 350F/180C for 35-40 minutes.
