Ingredients

  • 2 C. flour
  • 1 C. quick or Old Fashioned Oats, uncooked
  • 1 tsp. Baking Soda
  • 1 tsp. Salt
  • 1 tsp. Cinnamon
  • 1 C. Butter or Margarine softened
  • 1 C. firmly packed brown sugar
  • 1 C. granulated sugar
  • 1 egg beaten
  • 1 tsp. vanilla
  • 1 C. pumpkin (Libby's)
  • 1 C. Semi-sweet chocolate chips
  • 1 C. Nuts

Directions

Pre-heat oven to 350 degrees. Combine flour, oats, baking soda, cinnamon, salt and set aside. Cream butter and sugar gradually. Beat until fluffy. Add egg and vanilla. Mix. Alternate the dry ingredients and pumpkin. Mix well. Stir in chocolate chips. For each cookie place ¼ C. of dough on a lightly greased cookie sheet. Put a few chips on top. Make cookies about 2 inches in diameter.

Bake for 20 minutes until firm and lightly browned. Decorate if one wishes with candies, raisons, or nuts. Yields about 19 to 20 cookies.
