Ponemos el bacalao en remojo 24 horas antes y le cambiamos el agua dos o tres veces. Se limpia el bacalao de piel y espinas y y se desmenuza.
Picamos el ajo y el perejil en brunoise (muy fino) y lo ponemos en un recipiente junto con el bacalao. Se añade el huevo batido, la harina, y la cerveza la echamos poco a poco, según la vaya aceptando la masa (el resto de cerveza que nos quede nos la bebemos que hay que alegrar la cocina). Movemos bien la mezcla con una cuchara de madera.
Poner bastante aceite en una sartén y con una cuchara grande ir echado porciones de la masa anterior. Se fríen hasta que queden doradas por fuera y bien hechas por dentro. Para eso hay que procurar que no sean muy espesas.
Se escurren en papel absorbente.
Se sirven acompañadas de miel de caña, para cubrirlas por encima, es un plato exquisito.
