Ingredients

  • 3 small zucchini
  • 2 tablespoons olive oil
  • 1 tablespoon white wine vinegar
  • 2 teaspoons chopped fresh basil
  • ½ teaspoon crushed red pepper flakes
  • ¼ teaspoon ground coriander
  • julienne carrot strips

Directions

Slice ends off of zucchini then using a vegetable peeler thinly slice zucchini making ribbons.

Steam zucchini until just crisp tender.

Combine oil, vinegar, basil, red pepper and coriander then pour over zucchini and garnish with carrots.
