----Note on Making Dabeli: To construct the perfect dabeli, toast the buns until they are crispy and golden. Slather a generous helping of dabeli chutney (a mix of tamarind, dates, red chili powder, cumin powder, chaat masala, and salt) inside the bun. Fill with a mixture of boiled, mashed potatoes and dabeli masala. For an added touch, sprinkle pomegranate seeds, roasted peanuts, chopped onions, and sev (chickpea flour noodles).
