Ingredients

  • 3½ cups (475 g /1.05 lb ) all-purpose flour
  • 2 sticks (250 g/8.8 oz) unsalted butter
  • 1 cup (225 g/7.9 oz) caster sugar
  • 2 tablespoons ground ginger
  • 2 eggs
  • Milk as needed

Directions

Preheat the oven to 160 °C (320 °F) . Grease a baking sheet .

Rub the butter and ginger into the flour in a bowl until the mixture resembles breadcrumbs .

Add the eggs and mix to a soft dough , adding a little milk if necessary.

Roll out the dough to 5 mm (0.20 in) and cut out biscuits with a plain round cutter .

Place them on the prepared baking sheet and bake for 5 minutes until golden.

Take the biscuits out of the oven and leave them to cool.
