Ingredients

  • 1 fresh coconut
  • 65 g white sugar
  • 80 g cassava starch
  • 1 pinch nutmeg

Directions

Gently crack open the coconut, and separate the meat from the shell. Use a grater or food processor to shred the coconut.

Combine the grated coconut, sugar, cassava starch, and nutmeg. Stir in water until it forms a dough ball.

Roll out the dough until thin. Cut out square biscuits, and transfer them to a buttered baking tray .

Bake the biscuits for about 20–25 minutes at 150°C (300°F) until golden brown and crisped.

Remove the biscuits from the oven, and let cool.
