Ingredients

  • 100 oysters
  • 12 whole cloves
  • 24 whole allspice
  • Mace , to taste
  • Cayenne pepper , to taste
  • Salt to taste
  • 1 cup cider vinegar

Directions

Strain the oyster liquor through a sieve , and put it in a saucepan .

Add the oysters, spices, salt, and cider vinegar.

Place them over a slow fire, and as soon as they boil remove them from the heat.

Pour the oysters into a large bowl, and let cool.

When cooled, cover and store the oysters.
