Ingredients

  • 1 cup barley
  • 3 cups water
  • ½ tsp salt (optional)
  • 2 tsp neutral cooking oil (optional, to reduce foaming)

Directions

If desired, rinse barley under running water until water runs clear.

Combine the barley, water, salt, and oil in a pot.

Bring to a boil , skimming off any foam that forms.

Reduce to a simmer , cover, and cook until all the water is absorbed by the barley.

Remove from heat, and fluff like rice.
