Directions

Put in granite pan two tablespoons of butter, a small onion, a pinch of thyme, put over the fire. When melted stir in slowly two tablespoons flour (taking from the hot fire while mixing). When it is slightly browned, add a cup of water and let it simmer. Add three tablespoons of beef stock, a tiny bit of nutmeg. Put in mushrooms and cook fifteen minutes.
