Extract pulp from shaddock, ice and serve on lettuce leaves with mayonnaise.

The seed of the roselle is covered with a red calyx which is similar to the cranberry when cooked. It can be cooked whole, but makes a less stringy substance when the seed is re- moved from the calyx.
