One quart of vinegar, a quarter of an ounce of mace, half an ounce of cloves, half an ounce of black pepper, half an ounce of Jamaica pepper, half an ounce of long pepper, half an ounce of ginger, half an ounce of mustard seed, two- thirds of a pound of salt, twenty-five capsicums, six heads of garlic, one stock of horse-radish, fifty tomatoes.

Boil the ingredients, except the tomatoes, half an hour. Then peel the tomatoes and add them to the mixture. Boil all together half an hour, strain through a sieve. Bottle when cold.
