Boil one pound of sweet potatoes very tender. Rub them while hot through a colander. Add six eggs well beaten, half a pound of butter, three quarters of a pound of pow- dered sugar, one grated nutmeg, and some lemon peel, with a wine glass of brandy. Line a dish with paste, and fill with above. When done, sprinkle the top with sugar.
Irish potato pudding is made in the same manner, but is not so good.
