Pare off the green rind, and cut in pieces the size and shape | you wish. Throw in strong alum water, and let them remain || over night. The following day scald in water, then make a sirup of one pint of white wine vinegar and two pints of ! white sugar. Put in the melon and let it simmer ten min- utes. Add spices to suit the taste, but be careful not to use ; too much, as it will darken the pickles. Scald this sirup, and I turn over them for three mornings.
