Five pounds of sugar to eight pounds of fruit, one and a half pint of vinegar. Pare the peaches, and pour sirup (of vinegar and sugar) over them, to stand over night. In the morning, boil till the peaches are quite tender, then take out the peaches and add to the sirup spices (cinnamon, mace, and I a few cloves.) Boil the same half an hour, and pour over the peaches when cold.
