Beat the yolk of an egg- with a tablespooiiful of sugar, add about a tablespoonful of brandy, stirring well as it is poured in ; tablespoonful of cream, a little nutmeg, and the well beaten white of the egg last.

Boil a pint ; dissolve one teaspoonful of cornstarch in a little cold milk ; add to the boiling milk, stirring con- stantly, until thick enough ; take from the fire ; sweeten and flavor with nutmeg. In boiling milk, always set your saucepan in which you boil the milk, in a pan of boiling water.
