Pare, core and halve tart apples ; cover with water and stew till tender, not mushy. Alake a syrup of sugar and orange juice, boil till about to candy, dip the apples in and lay on a flat plate till cold. Serve with whipped cream.

Wash thoroughly and soak lo minutes in clean warm water : drain, cover with cold soft water, put back on the stove and stew from 2 to 4 hours. Do not stir while cooking, and 5 minutes be- fore taking up season with cinnamon, and sweeten to taste. Mash or not as you like.

Dried peaches may be cooked in the same way, but do not mash.
