Boil 2 cups vinegar, 1 cup water and 3 cups sugar with a little whole allspice and cloves and cinnamon bark to a thin syrup : skim well ; add tart aoples, peeled, halved and cored, or whole and cored, and boil till you can pierce easily with a fork. Put in jars and cover with the syrup. Take as many apples as the amount of syrup will probably cover well.
