Take any quantity of pears (winter variety preferable), cut in either cubes or rings, cover with water, and boil until tender ; weigh the cooked fruit, then drain off the juice; add equal amount of sugar to juice, and small bits of crystallized ginger and sliced lemon. Boil until a thick syrup is obtained; add fruit and cook to consistency of a preserve. Put up in sealed jars.
