To 1 cup of bread sponge, add 1 small egg, 1 tablespoon sugar, 1 tablespoon lard (not melted), a pinch of soda dissolved in a tea- spoon of water, I/2 teaspoon of salt ; mix all thoroughly together with the hand; add flour to make the dough like a soft loaf, by kneading in the bowl, (but not on the board) ; when thoroughly mixed set aside to get very light ; then roll out to about "^^ inch in thickness ; spread abundantly with sugar and butter previously mixed together; then sprinkle lightly with cinnamon; roll up like a jelly roll and cut off from either end with a sharp knife about 1 inch for each bun; place in biscuit tin (close together) and spread with but- ter and sugar; sprinkle with cinnamon; let rise until very light, and bake in a quick oven from ten to fifteen minutes.
