Select small ripe tomatoes. Prick each with a darning-needle; put down a laj^er of the tomatoes sprinkle liberally with salt ; then put in a layer of sliced onions, salt as before ; fill up the jar or tub with alternate layers ; let them remain so three days, then wipe off the salt and prepare a hot pickle of vinegar spiced to taste with cinnamon stick, whole cloves, etc.; pour when boiling over the tomatoes and onions ; put in a weight to keep them in the vin- egar and set dow^n cellar ; will keep without sealing in stone jars.
