  • 1 tablespoon butter or margarine
  • 1 large green pepper, cut into 1-inch squares
  • 1 12- to 16-ounce package frankfurters, cut into thirds
  • 1 11-ounce can condensed Cheddar cheese soup
  • 1/2 cup beer
  • 4 teaspoons prepared mustard
  • 5 to 6 drops hot pepper sauce
  • 3 cups hot cooked rice
  • 2 tablespoons sweet pickle relish
  • 1 teaspoon oregano
  • 1 teaspoon prepared horseradish
  • 1/4 teaspoon ground black pepper
  • 1 pound peeled and deveined shrimp
  • 3 cups hot cooked rice
  • grated Parmesan cheese (optional)
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground white pepper
  • 1/4 teaspoon ground nutmeg
  • 1 cup shredded Swiss cheese, divided

Directions

Cook onion in butter until tender but not brown. Add green pepper and franks. Cook 3 minutes longer. Stir in soup, beer, mustard and pepper sauce. Simmer until thoroughly heated. Serve over beds of fluffy rice. Top each serving with 1 teaspoon pickle relish.
