Ingredients

  • 6 cups flour 675g
  • 2 cups sugar 425g
  • 6 tsps Baking Powder 30ml
  • 4 tblsps margarine 60ml
  • 2 eggs
  • 2 tsps ginger 10ml
  • 1 cup stout 250ml
  • 2 cups Mixed Fruits 500ml or 1/2 lb (2 cups) raisin 225g
  • 1 cup milk 250ml
  • 1 tsp orange rind 5ml

Directions

Prepare tins (2-8" round). Grease with shorting.

In a large mixing bowl, put flour, sugar, baking powder, and other dry ingredients. Mix well.

Melt margarine over low heat. Remove from heat. Add stout and eggs.

Add liquid mixture (step 3) to dry ingredients. Mix well. Mixture should be soft.

Add milk to get a soft but not dropping consistency.

Put into greased loaf tins. (Let rest for about 30-45 minutes)

Bake at 350 F/180 C for 1-1/2 hours.
