Ingredients
- ½ cup (120 ml ) edible pine needles (preferably Douglas fir )
- Peel from 3 clementine oranges (or a similar easy-to-peel variety such as tangerines)
- 1 cup (240 ml) white sugar
- 1 cup (240 ml) water
- 2 cinnamon sticks
- 4 cloves
- 2 tbsp (30 ml) cardamom pods
Directions
Wash the pine needle branch and clementines.
Remove the pine needles from the branches and peel the clementines.
Mix the pine needles and clementine peels with the sugar in a container, and let this sit in the fridge for 24 hours. The sugar will extract the liquid from the citrus peels and produce a syrupy liquid.
Boil the cinnamon sticks, cloves, and cardamom pods in the water.
Pour the warm water with boiled spices into the container with pine needles and peels.
Mix the ingredients together and strain the mixture.
To make the finished soda, mix 1 volume of syrup with 5 volumes of carbonated water.
