Ingredients

  • 4 pieces of chicken breast, boiled and diced
  • 1 cup mayonnaise (light or fat-free works)
  • 1 cup sour cream (recommend light)
  • 1 cup grated cheddar cheese
  • 2 cups (about 1 sleeve) crushed Ritz crackers (or similar)
  • 3 tablespoons poppy seeds
  • 1 stick butter or margarine , melted

Directions

Preheat oven to 350°F (175°C).

Mix chicken with mayonnaise and sour cream. Spread this in the bottom of a 9x13 inch casserole dish .

Sprinkle cheese, crackers, then poppy seeds on top.

Evenly pour melted butter on top.

Bake at 350°F (175°C) for 25 minutes.
