Boil six or eight large apples till thoroughly done, strain through a colander ; sugar and nutmeg, or cinnamon to taste ; place the apples in a dish, and cover with the whites of three eggs, beaten to a stiff froth, into which has been stirred one cup- ful of sugar and the juice of one lemon.
