Beat the yolks and add to them the syrup, the half cup of cream, and cook the mixture in double boiler until it makes a coating on the spoon, stirring constantly. Turn into a bowl and beat until quite stiff. Fold in the whipped cream and pack in ice and salt for two hours. The success of glace depends upon the freezing of it. It must not be too hard. Experi- ence alone must be the guide.
