- 1 ounce pepper
- 4 quarts ripe tomatoes peeled 'and chopped
- 1 cup red peppers chopped
- 1 cup onions peeled
- 1 cup sugar
- 1 cup vinegar
- 1 peck yellow tomatoes
- 12 large white onions sliced
- 1 bottle good mustard
- 2 layers of tomatoes
- 1 tea- spoon ginger
- 1 grated nutmeg
- 1 peck ripe tomatoes
- 8 large onions chopped fine
- 1 table- spoon mixed spices tied in a muslin bag

Take 1 peck yellow tomatoes or small round red ones, prick each with a fork, put in a jar in layers with salt between. Let remain 8 days. Drain off. Add 12 large white onions sliced, 2 ounces each of ground cloves and allspice, 1 ounce pepper. 1 bottle good mustard. Put a layer of spices and onions between 2 layers of tomatoes. Scald the vinegar and pour over cold. They are fit for use in 10 days.

4 quarts ripe tomatoes peeled 'and chopped, 1 cup red peppers chopped, 1 cup onions peeled and chopped ; i cup each sugar and salt; li pints vinegar, L} teaspoons cloves and cinnamon, 1 tea- spoon ginger, and 1 grated nutmeg. Boil 3 hours, strain or not, bottle and seal hot.

1 peck ripe tomatoes and 8 large onions chopped fine. Add 1 cup sugar, 1 cup vinegar, a little salt, a little red pepper, 1 table- spoon mixed spices tied in a muslin bag. Boil until as thick as you want it.
