  • 2 tablespoons brown sugar

  • 2 scallions, white and green parts chopped
  • about 1/4 cup chopped mint, cilantro, and basil, if you have them—some or all
  • 6 ounces rice vermicelli noodles
  • 1 teaspoon vegetable oil
  • 3 tablespoons soy sauce
  • 1 tablespoon sugar
  • 1 tablespoon roasted sesame oil
  • 2 tablespoons rice wine vinegar
