Caramelized Rum Banana Bread with Macadamia Crumb Topping

21 ingredients Makes 1 loaf openrecipes

AJ proclaimed this banana bread a “keeper” when he tasted it. Then he amended that in his blunt way. “Actually. This is the best banana bread I’ve ever eaten. Ever.” I queried him how it compared to my other banana bread, and he said repeated “This is the best banana bread I’ve ever eaten. Ever.” Keep in mind that because the banana is first cooked on the stove top and then again in the bread, the banana flavor is less pronounced than a typical banana bread, but the caramelization gives a rich sweet depth to the bread, akin to a moist coffeecake.
