  • pipis (2 Handfuls)
  • 1/2 cup rice
  • 4 cloves garlic, chopped
  • 1 red onion, cubed
  • 2 ripe tomatoes, , cubed
  • 2 eggs, made into omelet and chopped up small
  • sambal oelek (or any other chilli)
  • 1 dash soy sauce
  • 1 dash oyster sauce
  • 1 lemon, juice of
  • 1 cup water
  • 1 can good tuna

Directions

Steam pipis to open, scrub out sand and remove from shells.

Set aside.

Brown rice in oil, (until opaque), add onion, garlic, soy and chilli and stir in.

Add water and put the lid on, let it bubble away until the rice soaks up the water.

Taste the rice then and if it is not tender or to your liking, add more water as before until rice is"Al dente".

When rice is cooked, turn heat down and stir in tomato, pipis, tuna, lemon juice and oyster sauce.
