Ingredients

  • 7 lbs/3 kgs ripe apricots,
  • 7 lbs/3 kgs sugar,
  • 1.5 qts/1,5 l vodka

Directions

1

Choose small, ripe apricots.

2

Wash and prick each one in several places with a thick pin.

3

Place them in a 5-6 qt/5-6 l glass jar with large opening.

4

Place a layer of apricots, a layer of sugar, alternating between the two and making sure the last layer is sugar.

5

Pour the vodka, cover the opening with cellophane or parchment paper and keep in a sunny place for 3-4 weeks, shaking the jar every 2-3 days.

6

After this time, keep the jar in a cool place.

7

When serving, strain through cheese cloth.

8

You can use the apricots as filling for cakes or you can boil them in water with sugar and serve as compote.
